Carrot Cupcakes




These were made for my future sister in-law, she's a big carrot cake fan!  Recipe I used for the Carrot Cake was from Rachel Allen, Bake, got the cream cheese recipe from Eat!  Topped with sugarpaste carrots. 
Tried two icing techniques, think I prefer the zig zag one.

These look gorgeous...i love carrot cake :). Been wanting to try making carrot cake cupcakes for ages! Did you store the cupcakes in the fridge once you'd iced them with the cream cheese frosting?

Thanks Cat! Carrot cake is one my favs too. The Rachel Allen recipe was for a cake, but I just put it into cupcake cases. Yeah I kept them in the fridge, wasn't sure of the protocol but they were fine in there.

Might have a go at making some cream cheese frosting myself now i know your cakes were ok in the fridge! Im always unsure if to store them in the fridge or not..some recipes say not to but others dont mention anything about the storage! I will give it a go!

I know I'm the same, I just thought because it's cheese it should go in the fridge.
Although the little carrots did suffer in the fridge, after a couple hours they started to melt. Next time I'll put the toppers on at the last minute.
